Fuku Sushi (Fukuzushi) in Saiki City, Oita Prefecture offers sushi that fully showcases the bounty of the Bungo Channel. It was once awarded a Michelin Plate, making it a renowned restaurant.

It might be considered unconventional, but I personally found it really fun that there was running water under the counter for rinsing your fingers.
At most high-end sushi restaurants, a cloth is usually provided for wiping your hands — but here, you get to use this little water stream instead.

The chef said, “There’s no sushi here that you can only taste in this place — fish from Saiki even goes to Toyosu.”

But precisely because of that, he wants you to try at least one new thing, to have a fresh experience.
It was a sushi restaurant where you could really feel that sentiment.

Fugu (pufferfish)

It was my first time trying fugu sushi. I really enjoyed the taste, and I was happy that it was included in the course.

tokobushi (small abalone)

Depending on the timing, you might even get to eat it while it’s still moving.
This time it wasn’t, which was a bit of a disappointment.
Still, it was incredibly fresh, and since it’s a sushi topping I rarely get to encounter, I really enjoyed eating it.

wasabi roll

This was a hand-rolled sushi with shredded wasabi from Nagano Prefecture.
If you chew too much, the spiciness really kicks in.
It was such a fun sushi to try.

Tamago sushi

Some people asked me, “Do you really eat tamago (egg omelette) here?”
But I wanted to try the style of tamago served at sushi restaurants in Kyushu, so I decided to give it a try.

Nearby, you’ll find Saiki’s fish market, bustling with activity in the morning.
They even have unique items like red shiso sushi.
Seeing red shiso used in sushi rolls made me think that shiso-maki could also be a wonderful idea.
